Salmon Potato Hash Recipe

Try out this easy Salmon Potato Hash recipe that can be made with your choice of yellow yukon OR sweet potato!

Serving Size: 3-4

Prep Time: 10 minutes

Cook Time: 40-45 minutes

Ingredients:

1 ½ pounds (fresh) Salmon

3 medium potatoes (yellow Yukon gold OR sweet)

½ pound shrimp (optional)

½ onion

2 bell peppers (1 green/1 red)

4 tablespoons butter (or olive oil)

½ teaspoon lemon juice

1 teaspoons salt

1 teaspoon black pepper

2 teaspoon garlic powder

1 tablespoon fresh dill

1 tablespoon parsley (optional)

1 tablespoon red hot, hot sauce

For Fried Egg:

1 egg per serving

½ tablespoon butter per egg

sprinkle of salt and pepper per egg

Directions:

  1. In a skillet (preferably a cast iron) melt butter on medium heat. Spread the butter throughout the entire pan, add the potatoes, and stir them in the pan until they are coated with the butter. (About 1 minute) Cover and let them cook for about 7 minutes or until they are almost fork tender.
  2. Spread potatoes around the pan (making a circle) and add the peppers, onions, salt, black pepper, fresh dill, and 1 teaspoon garlic powder to the middle of the skillet. Mix everything together and cover until potatoes are browned. (About 15-20 minutes)
  3. Make a circle with the potatoes again and add the salmon to the middle of the skillet. Season with 1 teaspoon garlic powder and lemon juice. Use a spoon or folk to mix in the season into the salmon. Once the salmon is almost cooked, mix everything together.
  4. (If not using shrimp, cook until salmon is done and skip to step 5) Proceed with the same circle and add shrimp to the middle of the skillet. Season with salt and pepper. Once shrimp are completely cooked, mix everything together.
  5. (If not using egg, skip to step 6) Remove the skillet from the hot burner and use a small pan to make the fried egg. Add 1 tablespoon butter to the pan, crack the egg in the pan, sprinkle salt, pepper, and IMMEDIATELY reduce to low heat. Cook until egg whites are set, and the yolks start to thicken (but are not completely hard). Flip the egg and cook until your desired doneness. Remove from the hot burner.
  6. Plate your salmon potato hash. Add red hot sauce (as much as you like). If you used an egg: place egg on top. Top with fresh parsley for garnish. Enjoy!
