One Pan Salmon with Potatoes and Asparagus

While my husband was away for a few weeks, I made this One Pan Salmon and absolutely LOVED it. I needed a meal that would allow me to do minimal work that would last a few days. This recipe is super easy and very delicious!

Prep Time: 20-25 minutes

Cook Time: 25 minutes

Total Time: 50 minutes

Ingredients:

  • Olive oil
  • 1 tablespoon minced garlic
  • 1 1/4 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1 lemon
  • 1 pound Salmon (4 to 6 pieces)
  • 1 pound of Honey Gold potatoes (bite side – slice in half)
  • 1 bunch of Asparagus
  • 8 oz of mushrooms

Make sure you have a big enough baking pan that will fit everything in it. If you’re saving this recipe, here’s the perfect size pan that’s just over $10!

Instructions:

  1. Preheat oven to 450 Fahrenheit.
  2. Add potatoes, salt, pepper, garlic, and onion powder to the baking sheet. Roast potatoes for 15 minutes.
  3. Season salmon to your liking: Rub 1 tablespoon of olive oil and minced garlic on the salmon with salt, pepper, garlic, and onion powder.
  4. Turn potatoes and add Salmon to the sheet and cook with potatoes for 5 minutes.
  5. Season asparagus and mushrooms with salt, pepper, and minced garlic.
  6. Add asparagus and mushrooms to the sheet and broil the meal until the salmon is browned. (Another 3 or 4 minutes)
  7. Mix lemon juice, 1/4 cup of oil, salt, garlic, onion powder, and pepper together and drizzle over the salmon, asparagus, and mushrooms.
  8. Add to a plate or bowl and enjoy! (With a glass of red wine if you’re 21+)
