So I saw something similar and wanted to add a little twist. I’m trying to find new meals to make while still making sure it taste like something because I have a husband to feed too. (Can’t be taking hours to make dinner that’s trash and we can’t eat lol) Anywho, here it is!
Prep Time: 35(ish) minutes
Cook Time: 45 minutes
Total Time: 1 hour and 20 minutes
Ingredients:
1 butternut squash
1 1/2 packs of shredded mozzarella
2 cups of ricotta cheese
1 box of lasagna pasta noodles
1 bag of frozen spinach
2 tablespoons of minced garlic
Kosher salt and black pepper (to taste)
1 cup of milk (I only use almond milk)
1 tablespoon of vegetable oil
Vegan OR gluten free? Try this recipe with vegan cheese and gluten free pasta noodles!
Note: I would suggest putting the water on for the noodles right before you put the squash in the oven. That way, it could start boiling and will be ready at the same time. (I learned the hard way and had to wait for the noodles after the purée AND spinach was already done smh)
Squash Purée Instructions: Preheat oven to 400. Rinse the squash, slice it in half, and clean out the seeds. Put vegetable oil on a baking pan and put the squash faced down on to the pan. Put the squash into the oven for 30 minutes. Once the squash is soft (a folk should easily go through it and if it doesn’t, put it back into the oven for about 5 more minutes) flip the squash over and let it cool down.
Spinach Mix Instructions: Cook spinach on the stove with minced garlic, garlic and onion powder, kosher salt, and pepper. (Being completely honest: I just seasoned it until it tasted good lol) But, if I had to guess, I would say 1 teaspoon of each. Lol! Once spinach is cooked, mix in 1 cup of ricotta cheese, and 1 cup of mozzarella cheese.
Lasagna Instructions: Once the purée and spinach is done, it’s time to start layering it! Using a baking pan, take a spoon full (a big spoon lol) of the purée and spread it on the bottle of the pan. Add a handful of mozzarella cheese on top. Next, add three lasagna noodles. Take the spinach mixture and put it on top of the noodles. (I would add more mozzarella cheese here too lol) Add another layer of noodles, the purée, and continue until you run out of purée, spinach, and cheese. The top layer should be the purée with extra cheese!
Put it in the over for 45 minutes! (Or until the cheese is completely melted)
Joel was my food critique and the only thing he had to add was that I should have used more mozzarella cheese. (Hence why I added another pack of mozzarella cheese in the ingredients because I only used 1) So, I hope you all try and like it! If you do, tag/mention me with reviews/feedback!
